A First-Ever Collaboration Between Two Long-Running Brands
The new flavor marks the first collaboration between Handel’s and Biscoff® maker Lotus Bakeries. Handel’s has been crafting ice cream since 1945, while Biscoff® cookies trace their origins to a Belgian baker in 1932. Both brands bring decades of history to the partnership.
Flavor Concept Created by a Franchise Team in Redondo Beach
The Cheesecake with Biscoff® Cookies was submitted by franchisee Paul Danylik and General Manager Jesus Lopez of the Redondo Beach Handel’s location. Lopez said the idea came from a dessert he had a few years ago and spent time trying to translate into an ice cream flavor.
Handel’s 2026 Lineup So Far
The new flavor joins a growing list of 2026 additions from Handel’s. Earlier this year, the brand released Raspberry Sheet Cake and Pink Lemonade as limited-time offerings. The company also introduced a non-dairy line made with Oatly Full Fat Oatmilk, including Coffee Truffle, Chocolate Peanut Butter Brownie, and Peanut Butter.

Each Handel’s location offers 48 fresh-made flavors daily, ranging from classics to seasonal options. Flavors vary by location and can be served in a dish, cone, or shake. Hand-packed pints are also available for taking home.
