Food and Wine names best new chefs each year but this year they added a new accolade – best restaurant of the year.

For 2022, they named Locust located at 2305 12th Avenue South its first Restaurant of the Year.

Khushbu Shah, who selected Locust as the Restaurant of the Year, says, “Locust is fully, uncompromisingly, and unapologetically itself—which is exactly what makes it so playful and brilliant.”

Chef Trevor Moran who was previously at The Catbird Seat and Noma in Copenhagen, Locust, started out as a dumpling and noodle pop-up during the pandemic.  Stating, “Chefs are very proud of saying out loud, ‘Oh, this business is so hard, and the only way to make it is if you just destroy yourself.’ And I always thought, ‘Well, that’s weird.’”

What makes the restaurant unique is there are no servers- the cook brings out your dish to the table. Also, the menu is always changing. Moran shared with Food and Wine, ”It still feels like a pop-up in our own permanent kitchen,” says Moran. “It’s lovely.”
